Spicy Meatloaf - Dark&Smoky

Ingredients
2 tablespoons olive oil
1 large yellow onion minced
3 stalks green onion
1 stalk of celery
3/4 cup panko breadcrumbs
4 Garlic cloves
1 cup ketchup (infused with Dark&Smoky ground flakes)
2 pounds 80/20 ground beef
3 eggs, beaten
¼ cup whole milk
1 bunch fresh Italian parsley chopped
Kosher salt and freshly ground black pepper
2 TBSP Flatiron Pepper Dark&Smoky flakes
Directions
Add minced onions and celery to a pan with olive oil and sear for 2-3 minutes on medium heat. Once they start to soften, set aside to cool.
In a separate bowl, add beef, cooled vegetables, eggs, minced garlic, fresh parsley, breadcrumbs, milk, black pepper and salt to taste, and 2 tablespoons of Flatiron Pepper - Dark&Smoky. Fold mixture to combine ingredients without over mixing.
In a separate bowl, Mix 1 cup of ketchup with 1tbsp of freshly ground Flatiron Pepper - Dark&Smoky.
Transfer meat mixture into a shallow, greased pan and cover fully with your newly upgraded ketchup. Place into a 400 degree oven and bake for about an hour or until the internal temperature reaches 160 degrees. Remove and let cool for 15 minutes before serving.

This is the best meatloaf I think I have ever tasted. The smokey flavor is perfect and heat level respectful, yet not painful. For those of you who like to ‘not feel your face’, you will want to shake more on top. 😁

This was really, really delicious! My husband is not a meatloaf fan and he loved this. I used a seasoning salt mix instead of kosher salt, and added 1/2 cup of the ketchup pepper mix to the meatloaf in addition to the cup of the mix I added to the top. I also shaped the loaf and baked it on sheet pan so all the surfaces got covered with sauce. Definitely a new addition to the dinner rotation.
