Hatch Green Chile and Cilantro Chimichurri

Hatch Green Chile and cilantro Chimichurri?!?! Such a simple way to add a ton of bright flavor to your next steak.

1 cup cilantro
1 cup parsley
1 tbsp Flatiron Pepper Hatch Valley Green
1/4 cup onion
2-3 garlic cloves
2 limes juiced
2 tbsp red wine vinegar
1/2 cup olive oil
1 tspn salt
Toss all of those ingredients into a blender or food processor, whatever you have. Add more olive oil until you’ve reached your desired consistency, (we like it thick!) and top your favorite steak! Pictured here is a tri-tip. Enjoy!
